Australian Beef and Lamb

Our Australian beef and lamb is farmed in selected parts of northern and southern New South Wales, south eastern Queensland and Victoria.

These southern regions are internationally recognised for farming premium grass fed and grain fed Australian beef and lamb.

Beef breeds or purpose-bred combinations include Wagyu, Angus, Hereford, Shorthorn and Limousin.

Lamb breeds include Poll Dorset, Suffolk and Southdown.

Our approved farmers and processors take pride in the animal welfare and health of all cattle and sheep at all stages of the production and supply chain to ensure it’s clean, natural and safe and delicious to eat.

We carefully select premium younger cattle and sheep meat for great taste and tenderness with a good meat and fat colour to achieve a consistent eating quality.

Our Beef Products

Grain Fed Wagyu Beef – 300 Days+

Our specialist breeding program only uses the best Japanese Wagyu genetics available in Australia.

Cattle are grain fed for more than 300 days on a balance of rich grains like rolled barley and wheat for full flavour and higher levels of marbling and for superior tenderness and extra succulence.

Current meat marble score ranges available are MB 4-5, 6-7, 8-9.

Our Wagyu is highly prized by Japanese and Korean restaurant chefs and customers.

Grain Fed Beef – 70-120 Days+

Quality grass fed cattle firstly graze on natural grass pastures before they are specifically grain fed for 70-120 days+ on a balance of rich grains to ensure we achieve a brighter red meat colour, whiter fat and light marbling characteristics.

Our grain fed products are respected by professional chefs in modern Chinese and European style fine dining and steak restaurants for juiciness, rich flavour and good levels of marbling and succulence.

Grass Fed Lamb

Grass fed on natural, open grass pastures with lots of sunshine, clean rainfall and water.

Our lamb is less than 12 months old for a lighter meat and fat colour, resulting in a much milder flavour and a tender product.

It’s available as boneless primal and bone-in including full carcass or 6 way cut.
